Since D was born, I've taken the easy but no-so economical route of purchasing pre-cooked frozen meatballs instead of making them homemade like I usually do. When D is a little older and can sit up better, and play more, I'll return to my still quick and easy method of making meatballs.
Here's one type that I've made:
Mix together ground beef, Dijon mustard, bread crumbs, 1 egg and seasonings (pepper, season-all, etc).
Here's the quick and easy part:
Instead of shaping individual meatballs by hand, I use an ice cream scoop (for large meatballs) or a melon-baller (for little meatballs). I scoop the big meatballs into a muffin pan (1 in each spot) and bake.
That's my short-cut to making meatballs when I'm not buying them pre-made!

OK, seriously, but I just made meatballs for the first time in my life two weeks ago. Those tips are great.
